I was in one of these tournaments last week. I have pretty quick reaction time and reflexes and I never missed hitting one of the bonuses, and my speed never dropped hitting the spin button, and I still scored way down on the list. I will admit, however, that it does make the tournament a little more interesting, as you have to concentrate on doing two things together and as quickly as possible.

That's possibly the optimal strategy as people aren't aware that stuff other than ballons and candies can appear on screen. And of course you have to remember to keep mashing the spin button at the same time you're mashing the touch screen, a lot of people can't do both at the same time.
Someone else mentioned that you get 3 seconds to pop a ballon, maybe so, but the longer you take to pop ballons the less ballons you will get.
