Yes, Green Valley Ranch has some decent games. But that depends on what you are interested in playing and at what denom. VPFree2.com would be helpful to you. It lists the good games at many casinos and often the location of the machines. If you will be in LV for the short time you state, VPFree2 might save some walking around time.
As far as recommendations for comedy shows go, it depends on your taste. Some shows are a bit raunchy, some incorporate magic or ventriloquism, some are straight stand-up. I have enjoyed everyone I've seen perform at places on the Strip. My favorite is Terry Fator.
Tourist stuff- If you have not been downtown, go! At night.Free parking, but validate your slip at the cage at many places.
Other fun stuff off the strip is visiting Red Rock Canyon (the loop road takes about an hour) and seeing the gorgeous Red Rock Casino, which also has some decent VP.
My advice is to save the Grand Canyon for another, separate trip.
