Some quick feedback: I can understand where a "gut" level feel for variance might lead you to this statement, but it's wrong.

VP variance measures the difference between the payout of various wins vs the average expected payout/hand (which tends to approximate 1 bet). As such, variance will generally be increased with a payout bump for any given hand, and decreased should a payout be reduced.

btw, the paytable vprod asks about was a former favorite at Harrah's AC (referred to as "Double Bonus/Double Jackpot") and found on certain Bally Gamemakers. Those machines had auto-hold as an optional feature; the strategy had just a few flaws, permitting fast play/correction. Unfortunately, long since removed.
