Personally, I hated the restaurant at the M. It served "farm styled comfort food" which meant huge portions with loads of sugar and lots of deep frying. Anyone who was looking for healthy alternatives and portion sizes couldn't find anything to eat there. The "Red Cup Cafe" they had there previously was a decent-enough hotel coffee shop. I don't know the economics that forced the change, but I strongly preferred the Red Cup.
As a specialty restaurant somewhere the Hash House might do just fine. Lots of people like it. But as the only coffee shop, it isn't a good choice.
The "no comps" policy didn't please me --- but since I really didn't want the restaurant anyway this was irrelevant. If you did like the place, though, I can see that this policy would be very irritating to players.
It might be a decent fit at the Rio --- so long as they don't replace Sao Paulo coffee shop or the All American Grill with it. These places fill the need for people who wish "usual" choices. There are other specialty restaurants at the Rio and the Hash House might find a niche.
