Somewhere...I heard that casinos make ~3% more than optimal on VP, but
it may just be hearsay (and would obviously depend on clientele).
I've seen some really whacked plays; e.g. throw away Full House to
hold one pair.
Although I haven't the throw away royal stories I've read on VPFree.

When I tried "salting" chips in Vegas, and then later talked to my
hosts, I found that
1) Didn't help for BJ.
2) Hurts for craps. They *over*estimated how many chips I salted
away. So on craps, I always let them color up...and even tell them
how much I'm cashing out!
In BJ, one mistake/hr can wipe out your edge. Long-term tracking
helps figure out what your real edge is...
