while i have no idea if this game would have broad appeal, i personally think the concept is a lot of fun, and i'd love to see it in casinos.
that said, wow does your paytable need work.
i played two sets of 100 hands, had a return of over 250% in each set, and didn't feel like i was running especially hot. i'm also sure i was playing very suboptimal strategy. (though not as bad as the example plays in the video!) i'm sure i could beat the game betting 20 credits per hand, and you're only requiring a bet of 10 in your demo. it's hard to dislike a game where you always win, so at this point in development, i'm not sure how useful the feedback you're getting will be.
my intuition says you're going to have to reduce the top multipliers, reduce the straight multiplier, and put a qualifier on the pair multiplier, to get anywhere close to a 10 credit EV. not that you should trust my intuition, or anyone else's. hire a programmer to do the analysis, if you haven't already. it shouldn't cost more than you've already paid to get the patent filed.
once the paytables are adjusted, the game will mercilessly crush anyone playing bad strategy, far more so than regular VP games. optimal strategy will be very difficult. i'd think that would be a problem for long-term survival, but Ultimate Texas Holdem has the same characteristic, and it's doing pretty well.
good luck. you'll need it.
