I've heard knowledgeable people recommend stopping when you've won twice the max rebate amount if you're playing a high variance game. Others playing more conservatively say to stop if you've won half the amount of the max rebate.
Not sure if there's a way to mathematically decide on a stop-win. I suppose running simulations would at least give you information to help make a decision.
