If this type of story is interesting to you, you may be interested in reading some of James Swain's "Tony Valentine" novels. Valentine is a retired AC cop who runs a consulting business that specializes in helping casinos ferret out cheats and scams. They are pretty fast reads, but with lots of authenticity, and some very clever explanations of the various ways people try to achieve positive EV ; )
